Thistle and Whey exists to create beautiful food for people using local, seasonal ingredients and to inspire and empower you to cook well for yourself whilst treading lightly on the earth.
My purpose is to give you confidence in cooking with vegetables, to help you adopt more sustainable practices in your home and life and to get you excited about the simple beauty of living in tune with the seasons.
Ever since I was a kid I've loved gathering people together over food and years of working in hospitality has both compounded that love and made me much more discerning about my food choices and decisions. I adore wandering through food markets wherever I am and filling my basket with local goodies, and then going home to create a feast to share with friends. I get very excited about beautiful fresh produce and will tell you all about it, if you'll listen! I believe in simple food and good ingredients, and supporting quality local producers- I think this is all you need to create a bountiful feast.
Over the years the impact my choices have on this planet has become more and more important to me, so I am always striving to make sustainable decisions and changes in my lifestyle. I decided to create Thistle and Whey to build a community for people to gather and learn about seasonal cooking and living more mindfully.
If I'm not in the kitchen baking a wedding cake or cooking up a storm for a seasonal dinner, I'm probably in the garden hanging with the flowers and bees.
I think having a connection to the natural world is so important, not only for your own wellbeing and health but also for the planet. We are all much more likely to care for something we love and treasure. So I'm on a mission to spend more time outside, and I invite you to join me! Whether it's a midwinter dinner by a bonfire or a picnic under the blossoming trees in spring, we can all discover a little more magic in our natural surroundings.
